Easy Stuffed Banana Almond Butter French Toast Recipe from Ezra Cohen Montreal

Almond Butter French Toast
September 25, 2023 by Ezra Cohen No Comments

There is nothing better on a lazy weekend morning than the sweet aroma of French toast wafting from the kitchen. Well, unless it’s almond butter French toast stuffed with bananas that is! What a luxurious, delectable breakfast option—a hearty substitute for bacon and eggs that’s full of clean, wholesome ingredients. And best of all, it’s wonderfully easy to whip up!

If you’re looking for the right almond butter to make this stuffed banana French toast, Ezra Cohen Montreal offers Bassé’s natural almond butter, renowned for its savory nutty taste and silky-smooth texture, making it the perfect indulgence on a weekend morning. And don’t forget to get creative! Top your banana stuffed French toast with anything your heart desires, from maple syrup and honey, to fresh fruit, berries, yogurt, even ice-cream!

Stuffed Banana French Toast with Almond Butter Ingredient List:

The ingredient list for this French toast banana recipe is fairly straightforward and simple. The only real decisions that you need to contemplate is the type of bread and almond butter to use. As noted above, there’s not a nut butter on the market that beats the ultra-smooth texture of the Bassé natural almond butter offered by Ezra Cohen.

As for the bread, it all depends on your preference and weekend mindset. Trying to keep your diet a bit healthier and less carbohydrate-filled? Opt for thinly sliced Ancient Grains bread. Looking to indulge in a cheat day? Thick-sliced brioche or sourdough make this a truly savory dish.

And if you want to make this banana French toast vegan, simply replace the organic egg with a plant-based egg substitute!

INGREDIENT LIST:

  • 2 slices bread of your choice
  • 2 Tbsp. Bassé natural almond butter
  • 1 organic egg or egg substitute
  • ¼ cup almond or oat milk
  • 1 banana, thinly sliced
  • ½ tsp cinnamon
  • 1 tsp vanilla
  • 1 tbsp olive oil, for frying
  • honey, maple syrup, fresh berries or ice cream (totally optional)

DIRECTIONS:

Step 1 – In a shallow bowl, whisk together the oat or almond milk with the egg, cinnamon, and vanilla. Set aside.

Step 2 – Slice the two pieces of bread into halves, and then layer up the bottom halves with the almond butter and banana slices. Then put the halves together to make a sandwich, and dunk both sides in the egg and milk mixture. Make sure the entire sandwich is well-coated and moist.

Step 3 – Heat the olive oil in a non-stick frying pan for a minute or two, then gently lay your French toast sandwiches on the pan. Fry for 3-4 minutes on each side.

Step 4 – Remove from the heat and plate your almond butter French toast stuffed with bananas. Top with anything you like!

  1. Brazil Nut Butter: An adequate alternative to the traditional peanut or almond butter, Brazil nut butter delivers a creamy, slightly sweet flavor and is packed with selenium, a powerful antioxidant.
  2. Whole Wheat Tortilla: A soft, pliable base for our wrap. It’s not just a vehicle for the filling but adds its own subtle flavor and is rich in fibers.

  4. Ground Cinnamon: A spice that adds warmth and an aromatic sweetness, complementing both the nut butter and fruits.

Health Benefits of Brazil Nuts

Brazil nuts aren’t just tasty; they’re a nutritional powerhouse. Bursting with selenium, they help support a healthy immune system and regulate thyroid function. Additionally, they offer heart-healthy unsaturated fats and are a natural source of magnesium, copper, and zinc. And to top it off, including them in your diet can benefit skin health and combat oxidative stress!

Ingredients List

  • 1 8-inch whole-grain tortilla
  • 2 tablespoons of Ezra Cohen Montreal Brazil nut butter
  • 1/2 cup of your choice of thinly sliced fresh fruit (like mango, kiwi, or berries). Feel free to mix and match based on the season!
  • A sprinkle of ground nutmeg or cinnamon (optional for added flavor)
  • 1 tablespoon of coconut flakes or chia seeds (optional for texture and added nutrients)

Instructions

  1. Lay out the whole wheat tortilla on a flat surface.
  2. Evenly spread the Brazil nut butter onto the tortilla, ensuring you reach the edges to make a sticky “seal” for the wrap.
  3. Delicately sprinkle the ground cinnamon over the Brazil nut butter layer.
  4. Place the thinly sliced fruit of your choice across the center of the tortilla.
  5. Gently roll up the tortilla, ensuring the wrap is tight and compact.
  6. Slice the wrap into bite-sized pieces if desired, or enjoy it whole.

Ezra Cohen Montreal
August 10, 2023 by Ezra Cohen No Comments

Warm, comforting, and bursting with rich flavors, African Cashew Soup is a delightful dish that brings together the heartiness of vegetables, the creaminess of cashew butter, and a medley of aromatic spices. Originating from Africa, this soup is a culinary masterpiece that has earned a special place on tables worldwide.

This flavorful, hearty dish is perfect for cooler evenings or whenever you’re craving a taste of Africa’s culinary heritage. See below for the full recipe!

Ingredients:

Note: This recipe serves 4-6 people.

  • 1 cup Ezra Cohen Montreal’s creamy cashew butter (or brand of your choosing)
  • 1 large onion, chopped
  • 3 cloves garlic,
  • 2 medium carrots, peeled and diced
  • 2 celery stalks, diced
  • 1 red bell pepper, diced
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon ground turmeric
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon cayenne pepper (adjust to taste)
  • 4 cups vegetable broth
  • 1 can (14 oz) diced tomatoes
  • 1/2 cup coconut milk
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Fresh cilantro or parsley for garnish

Instructions:

  1. In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent. Stir in the minced garlic, ground cumin, ground coriander, ground turmeric, ground cinnamon, and cayenne pepper. Cook for an additional minute until fragrant.
  2. Add the diced carrots, celery, and red bell pepper to the pot. Sauté for a few minutes until the vegetables begin to soften.
  3. Pour in the vegetable broth, canned diced tomatoes (with their juices), and cashew butter. Stir well to combine all the ingredients. Using an immersion blender or a regular blender, blend the mixture until smooth and creamy.
  4. Return the blended mixture to the pot and place it over medium-low heat. Allow the soup to simmer on low for about 15-20 minutes so the flavors can integrate together. Stir in the coconut milk, then season the soup with pepper and/or salt according to your taste preferences.
  5. Once the soup is heated through and seasoned to your liking, ladle it into bowls. Garnish with cilantro or parsley leaves for a burst of freshness and color.
  6. Serve the African Cashew Soup alongside your favorite crusty bread or over basmati rice! Enjoy!
