Peanut Butter Pancakes From Ezra Cohen, McGill Grad

The newest recipe from Ezra Cohen, McGill University food enthusiast, applies a healthy spin on an otherwise classic breakfast staple. Everyone loves pancakes (unless you’re on team waffles), and as a morning favorite everywhere, we’ve decided to share one of our recipes for creating your very own nut butter pancakes.

Staying true to our belief that healthy food doesn’t have to taste bad, we’ve concocted what we’re calling one of the best “peanut butter” pancake recipes around. These are perfect healthy treats for kids, adults, and the entire family. Just keep reading below and you’ll be cooking up a batch of these nut butter cakes in no time!

Nut Butter Pancake Recipe From Ezra Cohen Montreal

Here’s Exactly What You’ll Need

Dry Ingredients

  • 1 ½ cups of all-purpose flour
  • 2 tablespoons of baking powder
  • 1 tablespoon of sugar
  • ½ teaspoon of salt

Wet Ingredients

  • 1 ¼ cups of milk
  • 1 ripe banana, mashed
  • ⅓ cup of Ezra Cohen Montreal nut butter
  • 1 egg
  • 1 tablespoon of canola oil
  • 1 teaspoon of vanilla extract

Preparation

The best part about pancakes (other than their taste) is how easy they are to make. For today’s recipe, the entire preparation process takes very little time, and between the prep and the cooking, you shouldn’t need more than 30 minutes to make one batch.

  • Bring your pan, or griddle (preferred) if you have one, to a medium heat
  • Combine, and evenly mix the flour, sugar, salt, and baking powder into a large mixing bowl
  • Using a separate mixing bowl, combine the milk with the mashed banana, canola oil, vanilla extract, egg, and your choice of Ezra Cohen nut butter
  • Combine both bowls of ingredients by slowly whisking the milk mixture into the flour mixture until the contents are thoroughly blended together
  • Once your pan or griddle has reach the the optimal temperature, ladle the batter onto the surface using ¼ cup measurements and allow to cook for 2-3 minutes
  • Once you see small bubbles forming in the batter, flip them and cook for another 2-3 minutes, or until the bottoms have been browned
  • Repeat with remaining batter until all pancakes have been made
  • We recommend letting them cool down for a couple minutes before serving

Peanut Brittle Caramel Crunch Ice Cream Pie From Ezra Cohen Montreal

At Ezra Cohen Montreal, we’re all about taking those classic dessert favorites and elevating them through a little healthy twist. In capturing that spirit, today we’re sharing our recipe for Peanut Brittle and Caramel Crunch Ice Cream Pie, made with our non-GMO certified nut butter. This treat is perfect for serving large parties or events and is pretty much a guaranteed crowd-pleaser.

Just below, you’ll find all the information you need to get started on this tasty dessert.

What You’ll Need

Caramel Sauce:

  • 3/4 cup whipping cream
  • 1/2 vanilla bean, split lengthwise
  • 2 tablespoons (1/4 stick) unsalted butter
  • 1/4 teaspoon fine sea salt
  • 3/4 cup sugar
  • 1/3 cup water
  • 1/4 cup light corn syrup

Pie:

  • 9 whole graham crackers
  • 1/4 cup (packed) dark brown sugar
  • 5 tablespoons unsalted butter, melted, hot
  • 1 1/2 teaspoons vanilla extract
  • 1/2 cup salted roasted cocktail peanuts
  • 3 pints premium vanilla ice cream, slightly softened
  • 5 tablespoons natural-style (non-hydrogenated) creamy peanut butter
  • 1 cup coarsely chopped peanut brittle
  • Your choice of Ezra Cohen Montreal Nut Butter

Preparation

  • First, you’ll need to prepare and create the caramel sauce that will drizzle over the final dish once it’s completed. In a small saucepan, combine the whipping cream, vanilla bean, butter, and sea salt. Bring the mixture to a nice simmering heat, but make sure not to burn the bottom of the sauce. Once its simmers, set the cream sauce aside for now.
  • Using a different larger saucepan, mix together the sugar, the corn syrup, and ⅓ cup of water over medium heat. Keep heating until the sugar has completely dissolved, then increase the heat until the mixture boils. Once this occurs, allow the combination to steep in the heat until it turns deep amber in color—this may take around 12 minutes. Remove from any heat, and slowly whisk in the vanilla cream sauce from earlier. Be advised, the mixture may experience some bubbling. Set the sauce aside once this is completed.
  • Onto the pie crust! Preheat your oven to 375˙F and then line your pie dish with aluminum foil. Using a blender, or similar food processor, finely grind together graham crackers and brown sugar, while slowly adding butter and vanilla until the crumbs turn moist. Lastly, throw in some nuts and blend until finely chopped. Pressed the crumbs against the foil-lined pie dish and then freeze for 15 minutes.
  • Bake the crust until it turns golden brown, then remove from the oven and freeze again for an hour. Afterward, peel off the foil and begin creating the layers for the pie itself.
  • Drizzle ½ cup of the caramel sauce over the bottom of the pie crust before filling with a pint of the ice cream and ½ pint of your preferred Ezra Cohen nut butter. Drizzle 3 tablespoons of peanut butter and 2 tablespoons of the caramel sauce over the filling. Repeat this step one more time and then garnish the final result with crunchy bits of peanut brittle.

Peanut Butter Smoothie Bowl From Ezra Cohen, McGill Graduate

Our very own Ezra Cohen, McGill University graduate and healthy food guru, believes in a simple mantra; healthy food should come in delicious recipes. And today, he wants to share another new one with you, a peanut butter smoothie bowl that’s easy to make and filled with organic, natural ingredients to fuel your active lifestyle. Our nut butters are designed to enhance taste, elevate your culinary creations, and of course, provide a healthy, but delicious ingredient.

As you may have already guessed, today’s recipe will call for two primary ingredients, bananas, and our all-natural nut butter. These will become the base components of the smoothie bowl, and any further ingredients are mostly customizable, but below we’ll share some of our favorites that will add a dash of flair and a pinch of flavor.

Ezra Cohen Montreal Peanut Butter Smoothie Bowl Recipe

Here’s Everything You’ll Need

Below, we’ve listed all the ingredients you’ll need, or might need, to create your perfect peanut butter smoothie bowl. Prep time is less than 5 minutes, and total creation time will take you less than 10!

*All quantities provide 1 serving

  • ½ frozen banana, ½ non-frozen sliced banana for topping
  • 1 tablespoon of Ezra Cohen Montreal all-natural nut butter
  • Dates, granola, kefir grains, acai, and chia seeds for toppings, mixtures, or additives
  • Almond milk- recommended for a “smoother” base

Preparation/ Cooking Instructions

  1. Using a preferred blender, place the frozen bananas inside first, then fill with 1 tablespoon of our all-natural nut butter(these will be your base ingredients)
  2. Place any other desired ingredients in the blender next—-> we recommend dates, acai, or kefir grains(they provide good taste and texture that will help create a tastier experience)
  3. Once the frozen bananas, nut butter, and all other desired ingredients are placed inside, blend the mixture until finely smooth, for a greater consistency we advise using a splash of almond milk as well
  4. Pour the mixture into your preferred bowl and then garnish with any toppings you desire—> granola, chia seeds, banana slices, and peanut butter drizzle are great choices for flavor and for adding a crunchy exterior

Chocolate Almond Butter Bites From Ezra Cohen Montreal

Ezra Cohen Montreal believes creating that perfect, healthy dessert shouldn’t be impossible. Typical recipes for health-conscious desserts usually remove sugar, caramel, chocolate, and those other tasty parts that make a dessert, itself. Instead of taking away, we encourage customers to use our nut butters and enhance their experience with delicious taste, that’s both healthy and wholesome.

Today, we’ve shared a recipe to create an easy, tasty, and healthy dessert dish, Chocolate Almond Butter Bites. As you may have guessed, this recipe calls for the use of our well-known, all-natural almond nut butter. The preparation time is only 25 minutes, and the small portion of the required cooking only takes a few additional minutes. That means in half an hour, you can have a delicious, healthy treat ready to eat! Just follow our instructions below:

Here’s What You’ll Need

½ cup of our all-natural almond butter

3 tablespoons butter, softened

¾ cup powdered sugar

1 teaspoon vanilla extract

6 ounces semi-sweet chocolate for melting (chips or chopped)–> you can also substitute dark chocolate chips here to reduce total sugar content!

optional: slivered almonds for garnish→ feel free to garnish as you like, but we recommend slivered almonds that pair well with the almond butter

Preparation/ Cooking Instructions

In a large bowl, use an electric mixer to blend almond butter and regular butter until you have a smooth consistency.

While simultaneously mixing, gradually add in powdered sugar and vanilla extract until fully incorporated. *The amount of powdered sugar may vary depending on the amount of almond butter, use enough until the bites can hold their shape easily

Using 2 teaspoons, form the bites and place them on a waxed paper-lined baking sheet. Cover and refrigerate for at least 20 minutes.

Melt chocolate chips according to package instructions, usually inside a bowl using a microwave.

Dip the bites one at a time into the melted chocolate, allowing excess to drip off. Place on a waxed paper-lined baking sheet. *At this point, you can garnish with a slivered almond on top of each bite, or however you please.

Allow chocolate to firm up before eating. To quicken the process, place in the refrigerator. Once the almond butter bites have hardened on the outside, they are ready to serve, eat, and enjoy!
The recipe is easy and simple to follow, does not require a large amount of kitchenware, and comes with a quick cleanup process.
