  • 2 tsp sesame oil
  • 2–3 cloves garlic, minced
  • 1 tsp fresh ginger, grated
  • 2–4 tbsp warm water (to thin)

For the Crispy Chili Oil:

  • 3 tbsp neutral oil (vegetable or grapeseed)
  • 3 tbsp chili flakes or use store-bought chili crisp
  • 1 tsp Sichuan peppercorns (optional, for that tingly heat)
  • 2 cloves garlic, thinly sliced
  • 1 tsp sesame seeds

Toppings:

  • Fresh cilantro, chopped
  • Green onions, sliced
  • Toasted sesame seeds
  • Crushed peanuts or almonds
  • Lime wedges
  • Extra chili oil

Directions:

  1. Cook Your Noodles: Start by cooking your noodles according to package directions. Once tender, drain and toss with 1 tablespoon of sesame oil to prevent sticking. Set aside.
  2. Make Your Almond Butter Sauce: In a large bowl, whisk together the Ezra Cohen Montreal Natural Almond Butter, soy sauce, lime juice, rice vinegar, honey, sesame oil, minced garlic, and grated ginger. The mixture will be quite thick at first. Gradually add warm water, one tablespoon at a time, whisking constantly until you achieve a smooth, pourable sauce that’s still thick enough to coat your noodles. You’re looking for the consistency of a creamy salad dressing.
  3. Prepare Your Crispy Chili Oil: If making your own chili oil, heat the neutral oil in a small saucepan over medium heat.
