Flavorful African Cashew Stew with Creamy Cashew Butter – Ezra Cohen Montreal

  • 1 cup Ezra Cohen Montreal’s creamy cashew butter (or brand of your choosing)
  • 1 large onion, chopped
  • 3 cloves garlic,
  • 2 medium carrots, peeled and diced
  • 2 celery stalks, diced
  • 1 red bell pepper, diced
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon ground turmeric
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon cayenne pepper (adjust to taste)
  • 4 cups vegetable broth
  • 1 can (14 oz) diced tomatoes
  • 1/2 cup coconut milk
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Fresh cilantro or parsley for garnish

Instructions:

  1. In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent. Stir in the minced garlic, ground cumin, ground coriander, ground turmeric, ground cinnamon, and cayenne pepper. Cook for an additional minute until fragrant.
  2. Add the diced carrots, celery, and red bell pepper to the pot. Sauté for a few minutes until the vegetables begin to soften.
  3. Pour in the vegetable broth, canned diced tomatoes (with their juices), and cashew butter. Stir well to combine all the ingredients. Using an immersion blender or a regular blender, blend the mixture until smooth and creamy.
  4. Return the blended mixture to the pot and place it over medium-low heat. Allow the soup to simmer on low for about 15-20 minutes so the flavors can integrate together. Stir in the coconut milk, then season the soup with pepper and/or salt according to your taste preferences.
  5. Once the soup is heated through and seasoned to your liking, ladle it into bowls. Garnish with cilantro or parsley leaves for a burst of freshness and color.
